Vegan Cauliflower Stuffing

Here is a wonderful stuffing recipe to compliment your holiday dinners. I made it this year at our Thanksgiving party and it complimented our turkey quite well.

INGREDIENTS:

  • 1 head chopped cauliflower
  • 1 medium yellow chopped onion
  • 1-1/2 cup chopped carrot
  • 1-1/2 cup chopped celery
  • 1 lb. chopped baby bella mushrooms
  • 1 - 15oz can cooked organic lentils (rinsed)
  • 1/2 bunch chopped parsley
  • 2 sprigs chopped rosemary
  • 3 cloves minced garlic
  • 1/2 cup chickpea flour
  • Juice of two lemons
  • 1 cup vegetable broth
  • 4oz vegan butter
  • Salt and pepper to taste

DIRECTIONS:
  1. Over medium heat, saute onions, celery, and carrots in butter until onions are translucent.
  2. Add mushrooms, garlic, and cauliflower.
  3. After mushrooms start to sweat, fold in the lentils and chickpea flour.
  4. Add lemon juice, vegetable broth, herbs, salt and pepper. Stir.
  5. When chickpea flour starts to thicken, turn off heat and cover.
  6. Transfer to crockpot and keep on warm. This allows the chickpea flower to cook all the way through and keeps the dish warm throughout the meal.

For all you carnivores out there, mix in some chicken apple sausage and you'll have a tasty and meaty meal!
