This healthy and delicious after workout snack is chock-full of protein! Guilt-free and packed with rich flavor, these truffles also help stabilize your blood sugar, making them the ideal mid-day pick me up!
1/2 cup Shaklee vegan protein 1/2 cup natural unsweetened almond butter (or choice of nut butter) 1/4 cup rolled oats 1/4 cup almond milk 3 Tbsp flax meal 1/4 cup maple syrup 1/3 cup vegan chocolate chips Optional: shredded coconut Mash all ingredients in a mixing bowl until the dough is easily formed into balls (truffles). If the dough is too dry and the truffles crumble, add a splash more almond milk and set aside so it has time to thicken and emulsify. After forming the truffles, roll each truffle in the shredded coconut if desired. Refrigerate truffles for 2 to 3 hours, and enjoy! Keep refrigerated to store. |
