It's October...i still have almost 2 weeks of pumpkin madness left. This is a new creation...really i just threw it together yesterday and i'm obsessed. Its vegan AND gluten free
Pumpkin Almond Pudding 1 1/2 cup unsweetened almond milk 3 tbsp libby's pumpkin puree (trust me your grocery store has it) 3 tbsp raw chia seeds 3 tbsp raw agave nectar 1/2 tsp vanilla 1/2 tsp cinnamon 1/2 tsp nutmeg stir the chia seeds with the almond milk for about 1 min and let it sit for about 5 minutes --during this time the chia seeds with start to congeal with the milk and become gelatinous next mix in the pumpkin --if the mixture is a little too lumpy and not smooth, it just needs a bit more almond milk. stir it in if needed next mix in the agave, vanilla, and spices let it sit for about a minute or so, make sure the consistency and sweetness is where you want it. adding either agave or milk as needed. THEN ENJOY! I find that the pudding is delicious if its not way too sweet, coz then you can have it with some ice cream or maybe with some fruit and it balances perfectly. Auditions seem to be going really great since I've been back. I'm kinda waiting on a lot of news at the moment, but I can't wait to share whatever happens with you hopefully within the next couple of weeks!!!! Live and Love Honestly ;-) |
