It's been over a month...Where do I start? How about I give you the recipe for my famous Pumpkin Spice Hummus? For those of you who got the newsletter this month, you're waiting for it. Use this wisely...may cause consumer riots demanding MORE!
Ingredients: 2 15 oz cans Garbanzo beans 2/3 can Libby's Pumpkin puree 3 cups apple cider 1 tbsp vegan butter (melted) 1/2 tsp cinnamon 1/2 nutmeg 1/2 cloves 2 tbsp agave nectar Process: drain and rinse beans heat cider in sauce pan on stove at medium heat until it very lighty bubbles. simmer the beans in the cider for 20 minutes until the cider starts to reduce add nutmeg, cinnamon, and cloves. Stir and turn off heat separate cider and beans and set both aside In the food processor; blend the pumpin puree, agave, and beans. Slowly add cider reduction as needed until smooth consistency is reached. You can add more agave if you like it sweeter.
