Wet Ingredients: 1 Russett Potato (peeled & grated) 1/4 of a butternut squash (peeled & grated) 3 tbsp bragg's liquid aminos or other tamari sauce 2 tbsp of chia seeds sitting in water (this acts as the binder) Dry Ingredients: 1 1/2 cup organic stone ground cornmeal 1 1/2 cup organic garbanzo flour onion powder/black pepper to taste 2 large sprigs rosemary (chopped) 1/2 tsp baking powder Avocado topping: 1 avocado 1/2 tbsp nutritional yeast splash of lime juice sea salt to taste --mash it all together with a fork! cook about silver dollar sized latkes in coconut oil on the stove on medium heat Top with Avocado mixture ENJOY! eat and repeat :) This is the kinda holiday that gets Vegans like me all hot and bothered...yea that's right. thanks to the hipsters of the world for making this leafy green a headliner!
Ultimate Kale Salad: Veggies: Kale (duh), cooked Quinoa, cucumber, cilantro/parsley, bell peppers, avocado, corn, black beans, mango/pineapple (choose one) Dressing: garlic, ginger, soy sauce, agave, minced onion, apple cider vinegar...whisk together, pour over salad...Eat...REPEAT! #BOOM |
