It's October...i still have almost 2 weeks of pumpkin madness left. This is a new creation...really i just threw it together yesterday and i'm obsessed. Its vegan AND gluten free
Pumpkin Almond Pudding 1 1/2 cup unsweetened almond milk 3 tbsp libby's pumpkin puree (trust me your grocery store has it) 3 tbsp raw chia seeds 3 tbsp raw agave nectar 1/2 tsp vanilla 1/2 tsp cinnamon 1/2 tsp nutmeg stir the chia seeds with the almond milk for about 1 min and let it sit for about 5 minutes --during this time the chia seeds with start to congeal with the milk and become gelatinous next mix in the pumpkin --if the mixture is a little too lumpy and not smooth, it just needs a bit more almond milk. stir it in if needed next mix in the agave, vanilla, and spices let it sit for about a minute or so, make sure the consistency and sweetness is where you want it. adding either agave or milk as needed. THEN ENJOY! I find that the pudding is delicious if its not way too sweet, coz then you can have it with some ice cream or maybe with some fruit and it balances perfectly. For those of you who got the newsletter this month, you're waiting for it. Use this wisely...may cause consumer riots demanding MORE!
Ingredients: 2 15 oz cans Garbanzo beans 2/3 can Libby's Pumpkin puree 3 cups apple cider 1 tbsp vegan butter (melted) 1/2 tsp cinnamon 1/2 nutmeg 1/2 cloves 2 tbsp agave nectar Process: drain and rinse beans heat cider in sauce pan on stove at medium heat until it very lighty bubbles. simmer the beans in the cider for 20 minutes until the cider starts to reduce add nutmeg, cinnamon, and cloves. Stir and turn off heat separate cider and beans and set both aside In the food processor; blend the pumpin puree, agave, and beans. Slowly add cider reduction as needed until smooth consistency is reached. You can add more agave if you like it sweeter.
