Can you believe its already August? GEEZ....where did the summer go?

So, as promised, here is the recipe for Raw Pad Thai that I promised to all of you who got my email update this month! 2 Carrots 1 Zucchini 1 red bell pepper 1 cup sprouts (of your choice...I used Sunflower sprouts because they have a little pepper zesty taste to them) 1/4 cup young coconut meat palm full of fresh basil THE SAUCE (The best part) 2 tbsp raw cashew butter 1/2 lime 1 inch piece of ginger 1/2 tsp dried lemongrass 1/2 bunch of cilantro salt and pepper to taste peel the carrot and zucchini into noodle-like ribbons all the way to the core (tip: you can save the core of zucchini for soup) Julienne cut the red bell pepper, coconut meat, and basil Toss all veggies together and set aside put the ginger, cilantro, and lime through the juicer to extract the liquid whisk the juice above with the raw cashew butter with a fork until smooth add the lemongrass, salt, and pepper and stir once again Toss the veggies and the sauce together and enjoy right away! This recipe doesn't keep well. Feeds 2 people a full plate...YUM My grandfather is really into astrology, and the way Hindus read astrology is a little different because its by the Lunar calendar. A lot of people ask me how much I "practice" Hinduism. And I always say that I'm a believer in anything that makes you stronger, do your best, or be a better person. I believe Astrology is a really great way to stay in check. It makes you aware of yourself and your actions and it also allows you to let the universe do its job. We don't have to carry the weight of the world on our shoulders, the universe is there to help. Anyway long story short, my grandfather predicted that this year (which on the lunar calendar started not too long ago), would be a big year for me in my career. Who doesn't like to hear that? At the beginning of this calendar year, I told myself that I would always put out good energy and let the universe do its job. I've never been happier in my life and career. WOW THAT WAS INTENSE.....but i like a good hippie-dippie moment every now an then. My next blog post will be soon...and it is gonna be GOOOOOOD ;-) Thanks for reading ya'll!
