I think mother nature has had a good laugh at us this year. It feels like April in New York...BUT that will not deter me from enjoying the beginning of summer.

Motivation cannot be taught, but it CAN be shared! It really resonated with me because in the last year, I've really learned what it means to surround myself with people who are THRIVING...and that MOTIVATES me to THRIVE in my own life and then in turn ENCOURAGE other people to do the same. The dictionary definition of THRIVE: to prosper; be fortunate or successful. Now its easy to shrug and say that all of this is subjective. But it is only subjective if you are comparing yourself to others. It is objective if you concern yourself...ask yourself big picture questions to help you make tough decisions. WHAT DO I WANT? DO I HAVE A DREAM? WHO the answer will most likely present itself. How do you like my strategic choice of capitalization of ACTION words? :-P Ok so the recipe this month is a dessert that was such a hit that no one realized it was vegan....let alone RAW VEGAN...well almost...my good friend and cast mate Lipica Shah and I wanted to make a tasty treat for our Bunty family and came up with these Almost Raw Vegan Almond Cookie Dough Bites....or for short Bunty Balls...that's what she said... I tweaked the original recipe just a tiny bit Bunty Balls Ingredients: 2 cups raw almonds 1/3 cup gluten free rolled oats (uncooked) 1/3 cup carob chips 1-2 tbsp raw cacao powder 2 tbsp raw honey OR agave 1/4 cup raw almond butter 16oz dates 1 tbsp coconut oil -in a food processor, blend the almonds and oats until it turns to a fine meal. -next add all remaining ingredients until about the same consistency as cookie dough -roll the dough into little bite sized balls and place in a wide rectangle storage container or a cookie sheet with parchment paper -put in the refrigerator for about 30 min to allow them to set -sprinkle the raw cacao over the balls...hehe...and serve on a pretty plate/platter! no better way to end this blog post than with balls on a platter...Sastry, OUT |
