This delicious recipe takes no time at all to prep and cook, making it the perfect afternoon snack or addition to a meal! Ingredients: -4 large unripened Green Tomatoes Wet: -Juice one lemon -1 cups almond milk Dry: -1 cup organic cornmeal -2 tablespoons flax meal -1 tablespoon arrowroot -1 tablespoon paprika -2 teaspoons garlic powder -1 tbsp salt -1 teaspoon black pepper Makes 4-5 servings (3-4 pieces per person) -preheat oven to 400 -Cut the green tomatoes into 1/2 inch thick pieces -Dredge in dry mixture lightly / then wet / then back to dry to coat tomato pieces. Make sure you shake the excess crumbs off -place in baking pan and drizzle liberally with avocado or grape seed oil (coconut oil works too) -cook tomatoes for 12-15 min or until golden brown -flip tomatoes and let cook for 5 additional minutes -after removing from oven, salt again so the seasoning stays on the tomatoes.
