twice baked potato bites

Get ready for the Super Bowl with an awesome game day snack! These twice baked potato bites are quick, healthy, and sure to be a 'touchdown' at any Super Bowl party. Give this recipe a try-- we guarantee you'll love it as much as we do! 

INGREDIENTS:
 
  • 1 ½ lbs of organic creamer potatoes (work best because they are creamiest, hence the name)
  • ½ can of organic canned coconut cream (Trader Joe’s is great. If you can only find canned coconut milk, keep it in the fridge until it’s solid enough to be spooned out)
  • ½ cup of your favorite vegan shredded cheese (like Daiya)
  • 3 tbsp nutritional yeast
  • 1 tbsp garlic powder
  • ½ cup of finely chopped scallions
  • salt/pepper to taste
 
Optional: chopped up and browned vegan sausage (make this ahead of time if you want to use it! I love the Field Roast brand chipotle sausage)
  
DIRECTIONS:
 
  1. Bring a large pot of water to a boil and parboil the potatoes for about 8-10 minutes – you want to be able to stick your fork into a potato without it falling apart, so watch carefully.
  2. After removing the potatoes from the water, pour out the hot water and refill the pot with cold water and ice to flash freeze the potatoes. This will stop the cooking process so they don’t get mushy.
  3. After the potatoes have cooled, cut the top and bottom off each potato so each one has a flat top and sits upright without rolling around.  
    1. PRO TIP: save the ends, drizzle with olive oil, broil for 10min, and season with salt and pepper for a yummy, crunchy snack the next day!
  4. Take a spoon and scoop out a tiny bit of the inside of each potato so there is a little hollow for the filling.
  5. As you scoop out the insides, put them in a mixing bowl.
  6. For the filling: in the mixing bowl with the potato, add the coconut cream, nutritional yeast, vegan cheese, garlic powder, and salt/pepper. Stir until it’s combined and creamy (here’s where you would add the chopped sausage).
  7. Place the potatoes on a baking sheet, drizzle with olive oil, and add salt and pepper to the plain potatoes to taste.
  8. Spoon the filling into the hollows you scooped out of each potato.
  9. Broil for 8-10 minutes, until the tops start to brown…make sure you don’t burn them!
  10. Top the potatoes with chopped scallion.
 
ENJOY!
 
This will feed about 5-6 people, a couple of potato bites each! This recipe is gluten free, dairy free, soy free, and of course, 100% #PallaVegan
