Flashback with me to summer 2012...Amidst waiting tables 30-40 hours a week, I was also spending any time and money i could spare to get in front of a couple of casting directors enough times for them to want to start calling me in for TV and commercial gigs. When I finally booked a couple co-stars and national commercials, I was STOKED! but man was I tired...I had to figure out some sort of creative outlet so I didn't hate "the grind" of show business.
So I decided to celebrate my first commercial residuals and cut back to 3 shifts a week at the restaurant so i could leave more time for auditions and start writing coz thats how you get your own show...I know what you're thinking....what if i'm not a writer??? Well, I'm not a writer either, but the first rule of writing is, write what you know. What do I know? well I like to eat yummy vegan food and I'm good at cooking it...so let's start there.
Then about a year into documenting recipes on the blog...I thought...you know what would be amazing? my own cooking show...and I cook a lot already. Why don't I just film it with my dinky camera or iPhone and invite some of my brilliantly talented friends to come over and eat it with me so I can brag about them on camera? Now here we are 2 years after i started my first written blog with a "Vlog" that i shoot, edit, and market with the help of my amazing husband, sister, mentors, colleagues, and friends.
I may not be making money from these videos (yet)...but at least I'm not waiting for someone to give me permission to work anymore...and it keeps leading me to new creative, lucrative, and really fulfilling opportunities and its creating relationships with people with similar goals and dreams...and I am a lot more relaxed when I audition now!!! all because I TRUSTED my gut and my dreams enough to open my mouth and ask for help from people that were better than me.
Now there are a lot of things that happened in between then to what I'm doing now and I'll share those things as this blog series goes on...but it all comes down to one thing....Trust. In theory its a simple concept but there are so many layers to the feeling that it takes many people years or even a lifetime to trust...in themselves, their family, friends, or an idea. The irony? How do we know that something won't happen or won't work unless we actually do it or try it? Here is the best part...The more we let ourselves trust....forget taking risks, you start to manifest dreams. So next time you doubt something, if you're not risking yours or someone else's life, what's the worst that could happen?

Here's the recipe for the month featuring another person I've brought on to my own cavalry...the amazing Christina Ramirez aka THE VEGAN NUGGET! This is just the beginning for us lady :) #staytuned
FIESTA BREAKFAST CASSEROLE:
1 medium sized Bell Pepper chopped (any color)
2 cups of chopped mushroom (any type)
1 bunch/bag spinach chopped
1/2 chopped onion (any type)
2 cups of organic cornmeal (polenta)
32 oz box of Veggie Stock
about 1-2 tbsp olive oil for cooking the veggies
2 tbsp nutritional yeast (this gives it a parmesean cheese type creaminess)
2 cloves garlic
1 tsp paprika
Salt/Pepper to taste
Serves up to 6 people

Marathon Runner Lazy Latkes
1 Russett Potato (peeled & grated)
1/4 of a butternut squash (peeled & grated)
3 tbsp bragg's liquid aminos or other tamari sauce
2 tbsp of chia seeds sitting in water (this acts as the binder)
1 1/2 cup organic stone ground cornmeal
1 1/2 cup organic garbanzo flour
onion powder/black pepper to taste
2 large sprigs rosemary (chopped)
1/2 tsp baking powder
1/2 tbsp nutritional yeast
splash of lime juice
sea salt to taste
--mash it all together with a fork!
cook about silver dollar sized latkes in coconut oil on the stove on medium heat
Top with Avocado mixture
ENJOY! eat and repeat :)
This is the kinda holiday that gets Vegans like me all hot and bothered...yea that's right. thanks to the hipsters of the world for making this leafy green a headliner!
Ultimate Kale Salad:
Veggies: Kale (duh), cooked Quinoa, cucumber, cilantro/parsley, bell peppers, avocado, corn, black beans, mango/pineapple (choose one)
Dressing: garlic, ginger, soy sauce, agave, minced onion, apple cider vinegar...whisk together, pour over salad...Eat...REPEAT!

You'll never guess who said that quote in the title...CHARLIE SHEEN! I am begrudgingly yet humbly acknowledging the intelligence and poignancy of that statement.
Now to continue what the newsletter said....
I am definitely one of those people who shares more uplifting inspiration and the days that I have that seem more success and positivity.
Does that mean I have the perfect life? No....it means that I am CHOOSING to see the light at the end of the tunnel on those days when things aren't going my way. It is not anyone on my social network's burden to console me on a bad day...that is truly impersonal and a total cop out on MY part...It is MY responsibility to personally seek out support from people who can get me through it with real human interaction.
Wouldn’t it be so great if we could look at those positive posts from those who seem to have it together as an invitation for more personal communication? If you see someone that is continually positive and sharing their success, then why not reach out to them and soak up that energy over a phone call or a coffee date? There is a lot of animosity developing through the misperceptions of information being put out on social media. "Ain’t nobody got time fa dat!"
Let's all let ourselves be vulnerable once in a while through human interaction and reach out to one another to see how we can lift eachother up. It’s something I’m always getting better at and always find reward in doing so. recipe of the Month: Pumpkin Chili
1 can rinsed organic lentils
1 can rinsed organic kidney beans
1 cup chopped shiitake mushrooms
1 cup chopped celery
3/4 cup organic pumpkin puree
1/4 of a large red onion chopped
8 oz of your favorite gluten free beer
1 tsp organic tomato paste
1 chopped poblano pepper
1/2 box of gluten free, low sodium veggie stock
(optional) 1 cup of cooked quiona or brown rice
olive oil for cooking
2 tsp chili powder (1 tsp for mushroom topping/1 tsp for chili)
2 tsp ground cumin (1 tsp for mushroom topping/1 tsp for chili)
1 bay leaf
1 tsp garlic powder
1 tsp sea salt
1 tsp oregano
1 tsp coriander
So you tell your friends that you're about to start the 5 Day Reset
And the first thing they ask is, "Do you have to give up wine?"
Then one of them says, "I did the Master Cleanse once - I only drank nasty cayenne lemonade for 10 days." And you say, "Wow, that sounds terrible."
Then everyone begins telling their most horrific juicing stories, competing for most-pathetic.

Rhubarb Baked Beans
4-5 slices of tempeh chopped (add more if desired)
1 cup finely diced onion
1 1/2 cups finely diced rhubarb
1 tsp grated fresh ginger
1 tsp salt
1/4 cup of dijon mustard
1/2 cup light brown sugar (packed)
3 tbsp balsamic vinegar
1 cup ketchup
2 - 14 ounce cans, drained and rinsed Cannellini Beans
coconut oil for cooking

What I mean by this month's title is that complaining and confusion on the difficulty of maintaining curls is a "tale as old as time..." and knowing the right tricks could determine wether you look like a beauty or a beast....don't judge, it made sense in my head.

SIMPLE, CLEAR, EFFECTIVE...
Don't get me wrong, I didn't dislike the old me...but when you get CLEAR on who you are, and you let your life evolve you inside and out, then you let the Universe do its job. I booked the first audition I went to after I cut my hair. #BOOM
SCREW HUMMUS...let me explain what i mean. Hummus became a thing in the last 7-8 years. It was a snack that could get you protein, fiber, and good fats all in one place. But what happened to hummus was it started getting really generic! As all things that become fads do, and its becoming so bastardized that i feel like all of the flavors basically taste the same! I mean no offense to hummus, I still love it, but I'm ready for some creativity on the finger food table!
Plus Banana chips and pesto are both separately so flexible you can do a million things with each of them in other recipes.
--make your own cereal by adding with brown rice cakes to almond milk
--throw some sea salt and drizzle some chocolate for a guilt free dessert
--homemade burger ingredient
--use as a condiment on basically anything
2-3 Bananas slightly ripe but still firm
Juice of 1 lemon
1 bunch of parsley
4 tsp hempseeds
1 tbsp cooking oil
1/4 cup Olive oil
3 cloves garlic
salt/pepper to taste

YOU GUYS I'M BACK! It's spring....my favorite time of year. I'm allergy free for the second year in a row thanks to shaklee and a plant based diet and I'm so excited for all of the produce that is abundant during this time of year!
also, its EARTH DAY! Here are 5 things you can do that will save you money and make you more "GREEN." Changing habits is a process and results take time....but really, how many times do magical things happen overnight? unless you've won the lottery.....wait, have you? coz i wanna know.
GO GREEN in 5 easy steps
1. switch from paper towels or cleaning wipes to microfiber cloth for cleaning. wash it, reuse, and stop spending too much money at Duane Reade for Bounty paper towels.
2. Buy produce seasonally and locally....saves a TON of money, really. look into your neighborhood CSA. splitting shares for a CSA between roommates is like a no brainer! Plus the more plants we eat, the ripple effect is that industrial meat production goes down....thus reducing carbon emissions into the atmosphere from machinery, delivery trucks, and methane gas. check out this awesome meal :)
3. Switch to non-toxic cleaning concentrates. The brand I use, Shaklee, not only decreased my allergy symptoms but I bought one $10 bottle of all purpose concentrate that I use for floors, glass, counters, etc in November of 2012 and I'm not even a 1/5 of the way through it....so by the time I get through it....I've saved thousands of dollars. #BOOM Here's a GIVEWAY!
4. Recycle, Reuse, Repeat....it has NEVER been easier to recycle. So just get a couple of cardboard boxes and make one of them plastic and the other paper....easy peasy...
5. When you spend money in general....know where your dollar is going. Support companies doing the right thing. You can even DRINK responsibly! Check out Veev Acai Spirit...a company that plants trees for the sale of their products.
Ingredients for the LEEK meal:
1 chopped Leek
Green of choice (I used Arugula)
half a green apple
1/4 meyer lemon (or regular lemon)
1 cup almonds (soaked in cold water overnight)
heaping handful of chopped leeksblack truffle oil (optional)
Dry Dill (optional)
Lightly Roasted Beefsteak Tomatoes:
2 large ripe Beefsteak tomatoes
3/4 cup chick peas
1 cup chopped mushroom of choice (i used oyster mushroom)
Approx--Tbsp of Soy Sauce/Tamari
quinoa or brown rice (for a side)
