I stole that little saying from Rachel Ray...who I'm sure stole it from someone else.
But speaking of Rachel; She is really trying to be an advocate for healthy eating. I'll be honest, I think the way she cooks still needs a bit of tweaking in the healthy department because she loves cream sauces and piles cheese onto everything...don't get me wrong its light years better than eating fast food!
Without getting too much on a soapbox, I will say that most of all, I do love that she is inspring and encouraging people to get into their kitchens and have control over what they put into their bodies. Now if you follow her show, she tends to make a lot of stews and soups, or "stoups" during this time of year. I have made the following recipe about 3 times now, including once at a dinner at the American Cancer Society (so you know its super healthy)...all 3 times I can't seem to get anyone to leave me any of it! So it must be good ;-) Season's Eatings!!!
Sweet Potato & Veggie Stew
Feeds at least 12 people hearty portions ;-)
Ingredients: (prep 30 min)
2 medium sized sweet potatoes (peeled and cubed)
1 large red bell pepper (seeded and chopped)
2 jalapenos (seeded and minced)
1 small red onion (chopped)
3 links of vegan sausage (cubed)
1 can of organic black beans (drained and rinsed)
1 can of organic kidney beans (drained and rinsed) --but you can use 2 types of whatever beans you want!
3/4 cup (each) of corn and peas (thawed)
2 big handfuls of chopped kale (don't forget to always wash your greens)
1 bottle of octoberfest beer (seasonal of course, but when octoberfest isn't being made a stout will work nicely)
1 box of mushroom broth (I make my own but Pacific Foods brand makes a great one that i like to cheat w/...find it at your health food store)
1 tsp of cumin
1 tsp of chili powder
3 cloves of garlic (grated)
salt and pepper to taste
Directions: (takes about 45 min)
in a large saucepan saute the onion, jalapeno, and bell pepper in olive oil until translucent; At the same time in a large non stick soup pot, start to brown the sweet potato, then add the vegan sausage and brown that as well. Add the onion mixture to the soup pot with the sausage and sweet potato. Add a bit more oil if you think its a little dry.
Then add the grated garlic and other seasonings. This is where most of the flavor for the stew will be, so make sure nothing burns. Add the beer and let it simmer until its mostly absorbed, stirring lightly in between. ADD the corn, peas, 2 types of beans and let them heat through for about 5 minutes. ADD the box of mushroom broth and let the entire stew simmer for a good 15 min, stirring every couple of minutes. Right before you turn off the heat, ADD the chopped kale and stir until its incorporated...this way it wilts but stays intact ;-) Serve and enjoy!
